Pink Snowballs ( Thanks again MOM *S* )

1 pkg. strawberry jello ( no water )
1 tin of cream
2 cups coconut
Mix together & roll in balls, then roll in coconut. Makes 1 doz.Yummy !

Chocolate Snowballs

3 cups rolled oats
1 tsp. vanilla
3 tbsp.cocoa
1 cup coconut
Boil these next ingredients 4-5 min.
1 cup sugar
1/2 cup butter
1/2 cup milk
Cool slightly...roll in balls...then roll in coconut.ummmummm

Pineapple Balls ( MOM strikes again *S* )

1 tin pineapple cubes
2 cups coconut
1 cup icing sugar
1/2 cup soft butter
Drain pineapple well.Cream butter & sugar.Add coconut. Mix well. Press
about 1 tsp. of mixture around each cube of pineapple. Roll in coconut.
Refridgerate to set.

Marshmallow Balls ( MOM loves to make goodies *S* )

1 bag miniature colored marshmallows
1/2 lb. dates chopped
1/4 cup walnuts chopped
1/2 cup canned milk
1 1/2 cups graham wafer crumbs
Mix all together. Roll in fine coconut. Refridgerate.

Cream Balls

1 cup coconut
1 tin cream
1/2 cup chopped cherries
1/2 cup white mini marshmallows
Mix together.Roll in balls & roll in coconut.

Cherry balls

1 cup soft butter
1 tsp. vanilla
3/4 cup coconut
1 cup icing sugar
1/2 cup chopped cherries
2 cups oatmeal
Cream butter & sugar. Add cherries, oatmeal & vanilla. Roll in ball &
roll in chopped nuts.

Peanut Butter Balls

1 cup honey
1 cup milk powder
1 cup chunky peanut butter
1 tsp. vanilla
2 tsp. wheatgerm
2 tbsp. coconut
Mix. Roll in balls. Roll in coconut.

Mom’s Banana Bread

Number of servings: 3 regular or 2 large loaves

INGREDIENTS

3 C. all purpose flour 3/4 t. salt
1 t. baking soda 2 C. sugar
1 t. cinnamon 1 C. chopped walnuts/pecans (optional)
3 eggs - beaten 1 C. vegetable oil
2 C. ripe bananas - mashed 1 8 oz. can crushed pineapple - drained
2 t. vanilla extract

INSTRUCTIONS

Combine first five ingredients, stir in nuts; set aside. Combine
remaining ingredients, add flour mixture stirring just until dry
ingredients are moistened. Spoon batter into two large or three
regular greased and floured loaf pans.

Bake at 350 degrees for 1 hour and 10 minutes or until a wooden
toothpick inserted in center comes out clean. Cool in pans for 10
minutes remove to wire rack.

Pumpkin Cookies

4 cups unsifted all-purpose flour
2 cups quick or old fashioned oats, uncooked
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cup butter or margarine softened
1 cup granulated sugar
2 cups firmly packed brown sugar
1 egg
1 teaspoon molasses
1 teaspoon vanilla extract
1 can (16 oz) Stokely Finest® Pumpkin
1 cup raisins or flaked coconut

Preheat oven to 350°F. Combine flour, oats, soda, cinnamon and salt; set
aside. Cream butter; gradually add sugars, beating until light and fluffy.
Add egg, molasses vanilla; mix well. Alternate additions of dry ingredients
and pumpkin, mixing well after each. Stir in raisins or coconut. Drop by
rounded tablespoons onto lightly greased cookie sheet; flatten slightly.
Bake 12 - 15 minutes or until cookies are firm and lightly browned. Remove
from cookie sheet and cool on rack.

Makes 4 to 5 Dozen 3 inch cookies
