Broccoli Salad

Ingredients  3-4 heads of fresh broccoli, 1 pound of bacon, 1-2 cans of pimentos, fresh chopped red onion, to taste sugar, mayonnaise, 8 oz.grated cheese, your choice, 1 bell pepper, chopped, 2-3 stalks celery, chopped

Preparation:
Cook bacon.  Let bacon cool and chop into bacon bits.  Cut broccoli into bite-sized pieces.  Add all ingredients together.  Add sugar to taste to about 8-12 ounces of mayo.  Taste should be sweet.  Add more sugar and mayonnaise depending on how creamy and sweet you like dressing.  Pour over all ingredients and mix well. Consistency should be fairly smooth but not sloppy.  Add grated cheese and mix  again. Chill and serve.

Refrigerator Soup

Ingredients:
Bits and dabs of leftovers in fridge. Combine leftovers...veggies, meat, pasta or rice in a pot.

If meat ingredient is beef, add desired am't. of beef broth.
If chicken or turkey, add desired am't of cicken broth.

Add any seasoning you like.

Heat on stove 'til desired temp.

Serve with crusty bread and fresh salad.

Takes about 15 min.

Dill Dip
16 oz sour cream
1 C. mayo
1 Tbs minced onion
1 Tbs dill weed
1 tsp Beau Monde spice

Combine and chill for atleast 1 to 2 hours. Best the next day.

Red Devil Soup
 

2 Cans Tomato Soup
1 Can Stewed Tomatoes
About a 1/2 Pound of Sharp Cheddar Cheese (Grated), Melted real slow in
the Tomato Soup
3 Tablespoons Worchestershire Sauce
Tabasco To Suit
2 Cans of Minced Clams
2 Cans of Mushrooms (pieces)
2 Cans of Crab Meat

When all the Cheese is melted in the soup mix, add Clams, Mushrooms,
and Crab Meat. Fresh seafood is much better but can get a little spendy.
Lobster would also be good in this soup.

Makes a real Hearty Soup and feeds many. My Dad brought this recipe back from Maine when he went on a business trip. He went on alot those when I was a kid, lol. Janice :)

Basic Fat Burning Soup:
6 large onions
1 or 2 cans (28 oz) whole tomatoes
1 large cabbage
2 green peppers
1 bunch celery
2 pks of Lipton Onion Soup Mix

Season with salt, pepper, curry, parsley, bouillon or hot sauce if desired. Cut veggies in small to medium pieces and cover with water. Boil fast for ten minutes.  Cut to simmer and continue cooking until veggies are tender. This soup can be eaten anytime you are hungry.  Eat as much as you want, whenever you want.  This soup will not add calories.  The more you eat, the more you will lose.  Fill a thermos in the morning if you will be away during the day.  If eaten alone for indefinite periods, you will suffer malnutrition.

Layered Taco Salad
chop lettuce and place in the bottom of a glass retangular pan.  Dice tomatoes and place a layer on top of the lettuce.  Layer one can drained olives on top of the tomatoes.  Layer 1 or 2  10 oz packages of shredded cheddar cheese.  Set this aside.

Brown about 1- 1/2 pounds of ground beef and add taco seasoning to this while browning.  Drain and place a layer on top of the cheddar cheese.  Refrigerate for 2 hours or overnight.  Add sourcream when eating.  Also tortilla chips.  It is really good.  I had taken it to a friends cookout a few years ago and everyone loved it.  Enjoy.

1 package of Beef Taco hamburger helper made according to instructions on the box.  1 pound of ground beef browned and drained. Two to four tomatoes, 1 can of pitted olives and sour cream. While the hamburger helper is cooking, in a dinner plate or two depending on how many people are eating it, shred lettuce to cover the bottom of the plates.  add a few pieces of diced tomato and sliced olives.  When hamburger helper is done place on top of lettuce.  Add the rest of the cold diced tomatoes and sliced black olives.  (I add shredded sharp cheddar cheese on the lettuce before placing hamburger helper on the plate.  Add sour cream to the top. Enjoy.  (Because we don't use sour cream too often, I purchase the squeeze bottle, it lasts longer.)  Yummy.  Enjoy! This entire dinner only takes 20 minutes or less.  We had this tonight.

Green Pea Salad

2 stalks celery
4-6 green onions with tops
1 can sliced chestnuts
1 package frozen peas, thawed completely

Lay out vegetables in order given in a shallow pan

Dressing
1/2 cup miracle whip
2 tbsp sugar
2 tbsp vinegar

Pour dresing over top; sprinkle parmesan cheese on top.  Cover and refridgerate 24 hours.
